Here’s a really easy and quick dessert, and if you’ve bought some nectarines which don’t taste quite as good as they looked, it rescues them very nicely.
For the nectarines:
4 nectarines, halved, stoned and topped with a little butter, a few drops of vanilla extract, a teaspoon of soft brown sugar or golden caster sugar per nectarine
Put in a baking tin in a hot oven (180 – 200 degrees) for about 15 – 20 minutes until the sugar starts to caramelise. (Any leftovers are nice with yoghurt for breakfast).
For the mascarpone:
A small tub of mascarpone
1 – 2 tablespoons amaretto
Mix together, adapting your quantities to taste and serve alongside the nectarines. Drizzle over some of the syrupy juices which escape. If you have some raspberries, so much the better..!
