OK, so it takes 45 minutes in the oven, but that gives you time to have a bath, make a cup of tea, raid the biscuit tin…
First, sprinkle the skin of 2 part-boned chicken breasts (now available at M & S in the 3 for £10 section!) with sea salt, black pepper and nutmeg, then fry in olive oil skin-side down until they are nicely golden. Meanwhile, cut four or five peppers into clumsy chunks and pop them into a lined baking tray with some olive oil, garlic and sliced onion.
Pop the chicken in with the peppers, then bake at about 170-180 degrees for 45 minutes.
Serve with wilted spinach or greens and a slice of lemon.
